  1. Prepare all your ingredients.
  2. Make the dressing. In a bowl, combine minced garlic, mustard, oregano, salt, pepper, lemon juice, and red wine vinegar. Slowly whisk in olive oil until combined. Set aside closeby. (You can also make the dressing a day or two before).
  3. In a large mixing bowl, add cucumbers, tomatoes and red onion. Add dressing and toss.
  4. Add feta and olives and gently combine. (Best if you allow 30 minutes before eating). Enjoy!
